Holiday Recipes

CHICKEN STEW (meat)

Ingredients: 6 tbsp vegetable oil
8 onions, chopped
6 garlic cloves, chopped
2 tsp chopped fresh root ginger
1-cup water or chicken stock
14oz can chop tomatoes
3lb chicken, cut into portions
½ tsp cardamom
½ tsp ground turmeric
¼ tsp ground cinnamon
¼ tsp ground cloves
¼ tsp grated nutmeg
Add to taste the following,
(Cayenne pepper, hot paprika, fresh coriander, Salt and pepper)
  
  
  Directions: Heat the oil in a heavy pot, add the onions and cook for 10 minutes until softened but not browned. Add the garlic and ginger and cook for 1-2 minutes. Add the water or chicken stock and the chopped tomatoes to the pan. Bring to the boil and cook, stirring continuously, for about 10 minutes, or until the liquid has reduced and the mixture has thickened.
Season. Add the chicken and spices to the pan and turn the chicken in the sauce. Reduce the heat, and then cover and simmer, stirring occasionally, for about 1 hour, or until the chicken is tender. Add a little more liquid if the mixture seems too thick. Garnish with coriander and serve flat bread or rice.
