LEKACH
Honey Cake (pareve)
1-½ cups, all-purpose flour
1/3 cup of fine sugar
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp mixed apple pie spice
1 tsp baking soda
1-cup honey
4 tbsp olive oil
2 eggs
The grated rind of 1 orange
5 tbsp orange juice
2 tsp chopped fresh root ginger
Directions: Preheat the oven to 350°F, line a rectangular 8
x 10 by 2"baking dish, with parchment paper. In a large
bowl mix together the flour, sugar, ginger, cinnamon, mixed
spice and baking soda. Make a well in the centre of the
flour mixture and pour in the dear honey, olive oil, orange
rind and eggs. Beat until smooth, and then add the orange
juice. Stir in the chopped ginger. Pour the cake mixture
into the prepared baking dish, and then bake for about 40
minutes, or until firm to the touch. Cool cake in baking
dish, and then put on serving plate, cut into small squares.
