Apricot
and Currant Jam (pareve)
makes about 2 1/4 cups
1 pound dried apricots
1/2 seedless orange, unpeeled and cut up
1 1/2 cups sugar
1/2 cup dried currants
1 tablespoon fresh lemon juice
Soak apricots for 1 hour in enough cold water to cover.
Drain, reserving 1 1/2 cups of the liquid. Pour the
liquid into the blender jar or food processor. Add the
orange and apricots. Process to chop coarsely. Transfer to a
medium heavy saucepan. Stir in the sugar, currants and lemon
juice. Bring to simmer over medium heat. Continue cooking
for 1 hour or until thickened. Pour into jars and
refrigerate.
